Yield: 6 Servings
- 3 eggs
- 1/4 cup butter, melted
- 2 cups cottage cheese (1 16 oz. container)
- 1 small onion, chopped
- 1/2 cup chopped smoked almonds
- 3 cups Erewhon Corn Flakes
- 1 cup (4 oz) shredded Cheddar Cheese
Preheat oven to 350 degrees.
In a large mixing bowl, beat eggs until foamy. Add the remaining ingredients, stirring until well-combined. Spread evenly in a greased 8x8 pan. Bake at 350 for 45 minutes until set and lightly browned. Let stand 5 minutes before cutting.
Serves 6 as a main dish, more as a side dish or appetizer.
