Sammie says, "I came up with this recipe in order to treat my sweet tooth. I eat a gluten and soy free diet and these little Crispy Peanut Butter Balls are a safe goodie."
- 1/2 cup peanut butter
- 1/2 cup organic brown rice syrup
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 2 cups Erewhon Crispy Brown Rice Cereal (any variety)
- 1/2 a cup Mini Chocolate Chips
Mix peanut butter, organic brown rice syrup, vanilla and cinnamon in a glass bowl.
Set the bowl over a pot of boiling water to let the mixture become warm and soft enough to stir.
Once the desired consistency is reached add Erewhon Crispy Brown Rice Cereal and Mini Chocolate Chips.
Roll the mixture into small balls and set them on a parchment lined baking sheet.
Place the finished product in the freezer for a few minutes to let the chocolate set up.
I store them in the fridge and they are super chewy.
