Cinnamon Apple Bars with Rice & Flax Crumbles


  • 1 stick softened butter
  • 1/3 cup honey
  • 1 teaspoon vanilla
  • 4 cups Erewhon Brown Rice Cereal, crushed
  • 1 cup flax meal
  • 1/2 cup corn flour
  • 1 teaspoon cinnamon
  • 3 apples, cored, thinly sliced
  • 1/4 cup granulated sugar
  • 1/4 cup raisins
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • powdered sugar
  • nonstick cooking spray


Preheat the oven to 350 degrees.

Spray a glass 8x8 baking dish with nonstick cooking spray. Cream the butter, honey, and vanilla together until smooth. Mix in the crushed rice cereal, flax meal, corn flour, cinnamon, and salt. Mix until well combined. Reserve a half cup of the dough. Press the remaining dough firmly into the bottom of the baking dish. Thinly slice the apples. Toss the apples with granulated sugar, cornstarch, raisins, and an additional one teaspoon of cinnamon. Layer the apples over the dough. Sprinkle the reserved dough over the apples.

Bake at 350 degrees for 40-45 minutes. Allow cooling for 15 minutes before serving.
